I’m a big fan of a slightly spiced flavour, and this infused sugar is a beautifully simple way to achieve that in anything and everything. This sugar is great for using in cakes, pastry, cocktails – really anything sweet that could do with a little added depth of flavour.
What you need:
- A small jar with a sealing lid
- 4-5 sticks of cinnamon
- Enough white sugar to fill the jar to the top
It’s the simplest thing in the world:
- Stand the cinnamon sticks up in the jar
- Pour the sugar over them
- Seal the lid and wait
Waiting is a key here, the longer you leave the cinnamon and sugar together, the more spiced the flavour becomes. I’ve had this in my kitchen for months – any time the sugar is 1/4 gone I top it up, being sure to give it a good shake so the flavoured and new sugars mix together.
When ever I open the lid I get a beautiful hit of cinnamon smell and I can’t keep them smile off my face.
